I remember reading somewhere that MAD Magazine once did a parody of Plastic Man. Has anybody ever seen this parody? Also the question arises, since PLASTIC MAN is already a Self-Parody, how do you make a parody out of a parody??

They did a pretty good parody of the BATMAN tv show which was a parody in itself.MAD has always riffed on superheroes so I wouldn't be surprised that Plas got the MAD treatment.

I think you mean "Plastic Sam" which ran in MAD's comic incarnation. It was reprinted in the color magazine series TALES CALCULATED TO DRIVE YOU MAD.
